Ingredients... *Full fat milk... 1 litre *Vinegar... 2 tablespoons  *Water... 4 tablespoons. Method... *Mix vinegar and water. *Boil the milk in a pan. *When milk starts boiling add gradually this vinegar water mix and keep stirring with a spoon.  Take care to add this vinegar water mix spoon by spoon only. *When milk solid separates and yellowish water releases, immediately switch off the Gas. Overboiling will make paneer hard in texture. *Place one soft cotton cloth in a steel strainer. Keep this strainer in a big pan so that whey water will get collected in the pan. Ingredients...
•Semolina/Sooji 1 cup
1 Cup...150 ml
•Oil 5 tbspn
•Green Pea 1 cup
•Carrot chopped 1/2 Cup
•Onion Chopped 1 Cup
•Split Black Gram 2 tsp
•Mustard n Cumin seeds 1/4 tsp
•Grated Ginger 1.5 tsp
•Dry Red Chillies 4
•Salt 1 tsp
•Curry Leaves 12
•Water 3 Cups
Method...
•Dry roast Semolina in 2 tsp oil.
•Heat Oil in a pan, add Mustard n Cumin seeds.
•After it splutters add split Black Gram, let it roast till pink in colour.
•Add Dry Red Chillies, Curry Leaves n Grated Ginger., Saute.
•Add Chopped Onions n Carrots.
•Saute till soft, add Green Peas.
•Add water, let it boil.
•Add Roasted Semolina n Salt.
•Mix carefully without forming lumps.
•Cover with the lid for 3..4 minutes.
Done.
Serve hot with a garnish of Coriander n Coconut.

Note...
1) While serving add lemon juice.
2) You can add a teaspoon of liquid home made ghee, on each plate.
3) You can cook in pure ghee instead of Oil

•1 वाटी उपमा रवा
1 वाटी...150 मिली
•5 टेबलस्पून  तेल
•1 वाटी मटार दाणे
•1/2 वाटी बारीक चिरून गाजर
•1 कांदा
•2 टीस्पून उडीद डाळ
•1/2 टीस्पून मोहरी व जीरे
•आले कीस  1.5 टीस्पून
•4 सुक्या लाल मिरच्या
•3 वाटी पाणी
•10..12 कढीलिंबाची पान
•1 टीस्पून मीठ
कृती...
•2 टीस्पून तेलात रवा भाजून घ्या...
•एका कढईत  तेल तापवून त्यात मोहरी व जीरे टाकून फोडणी करा...
•उडीद डाळ टाकून गुलाबी रंग झाल्यावर मग सुक्या मिरच्या..कढीलिंब. .आले कीस  घाला.
•बारीक चिरून कांदा व गाजर घालून खमंग परतून घ्या.
 •मग मटार  घालून पाणी टाकून उकळी येऊ द्यात.
 •मीठ व रवा घालून ढवळून घ्यावेत.
•झाकण ठेवून वाफ येऊ देत.
गरमागरम उपमा...खोबरे व कोथिंबीर घालून सर्व्ह करा.
टिप...
1)आवडत असल्यास वरून लिंबू रस घालून सर्व्ह करा.
2) सर्व्ह करताना एक चमचा पातळ साजूक तूप घालून करा.
3) तेल न घालता साजुक तुपात पण करता येईल.
