Homemade Paneer

This recipe is very easy to prepare.  You can prepare the Paneer at home and use by keeping in refrigerator for 2-3 days. Ingredients... *Full fat milk... 1 litre *Vinegar... 2 tablespoons  *Water... 4 tablespoons. Method... *Mix vinegar and water. *Boil the milk in a pan. *When milk starts boiling add gradually this vinegar water mix and keep stirring with a spoon.  Take care to add this vinegar water mix spoon by spoon only. *When milk solid separates and yellowish water releases, immediately switch off the Gas. Overboiling will make paneer hard in texture. *Place one soft cotton cloth in a steel strainer. Keep this strainer in a big pan so that whey water will get collected in the pan. Strain this milk and Paneer mix from the strainer.  *Immediately fold the cloth with paneer from all the four sides and make a small potli. Insert this p

For me Malpua is a very difficult sweet dish, which is easy to eat to but difficult to made..😄
But this easy and yummy recipe by my friend Jyothi Baliga...tempts me to try this dish...
and it turned out Yummmm.
Crisp, soft and flavour full....
With a crunch of Almond n Pistachio...mild flavour of Saffron, tastes divine.
Ingredients...
*All Purpose flour/Maida... 1 Cup
1 Cup... 150 ml
*Semolina/Sooji...a fistful
*Sugar...3/4 th Cup
*Buttermilk...1 Cup
*Green Cardamom Powder..1/2 TSP
*Pure Ghee Solid... For shallow frying
Method...
*Mix All Purpose flour, Sugar, semolina and Buttermilk , take care not to form lumps.
*Continue mixing till Sugar dissolves.
*The consistency should be flowy like Idli Batter.
*You can add little water if required.
*Keep it aside for one-hour. Add Green Cardamom Powder.
*Take a flat pan with border, heat Ghee.
*Pour 2..3 tablespoon batter, spread it little with the back of the spoon.
*Let it be crispy red, flip, and cook from other side too.
*I have made two Malpua at a time.
*Garnish with chopped Dry fruits, and Rabadi.
*You can substitute Rabadi with fresh cream, add few strands of Saffron in the cream.

मालपुआ
मालपुआ  अतिशय स्वादिष्ट असतो, खायला मजा येते,😋😋
पण बनवायला अतिशय कठीण असतो असे माझे मत होते .
माझी मैत्रीण ज्योती ची रेसिपी पाहिली आणि मला पण असं वाटू लागले की आपण पण मालपुआ  करून पाहिले पाहिजेत. कुरकुरीत व थोडेसे नरम... गोडसर मधुर चव...😋
सोबत कुरकुरीत बदाम-पिस्ते, केशराचा मंद सुवास ... अहाहा...सुंदर झाले होते ...😄
आज आपण बघूया ह्याची रेसिपी...
साहित्य...
*मैदा ...एक कप
एक कप... 150 मिली
*रवा.. एक मुठ
*ताक... एक कप
*साखर... पाऊण कप
*वेलची पावडर... अर्धा टी स्पून
*साजूक तुप .... तळण्यासाठी... शॅलोफ्राय केले आहे
कृती
*मैदा ,रवा ,ताक आणि साखर एकत्र करून घ्या आणि साखर विरघळेपर्यंत ढवळत राहा.
*इडलीच्या पिठाप्रमाणे सरसरीत पीठ झाले पाहिजे.
*जरूर वाटल्यास अगदी थोडे पाणी घाला .
*एक तास मुरत बाजूला राहू द्या.
*नंतर बाजूने  कडा असलेले सपाट बुडाचे पॅन घेऊन त्यात तुप पातळ करून घ्या. मी शॅलोफ्राय केले आहे.
*2..3 टेबलस्पून पीठ घालून त्याला  थोडे पसरवून घ्यावे.
*दोन्ही बाजूने कुरकुरीत गुलाबी रंगावर तळून घ्या .
*प्लेट मध्ये काढून ठेवा .
*सर्व्ह करताना त्यावर बदाम पिस्त्याचे काप व रबडी घालून  द्या.
*रबडी नसेल तर घरची  साय फेटून  त्याच्यात थोडीशी साखर आणि केशर घाला, झटपट  रबडी तयार.
*खुप सुंदर लागतात.

Ingredients  1 cup...150 ml •Milk powder....2 Cup  •Milk... 1 Cup  •Pure ghee...Melted...1/2 Cup •Grinded sugar...1 Cup  •Coarsely grinded sugar...3-4 tbsp  •Nutmeg powder.... 1 tsp  •Green cardamom powder... 1 tsp  Method  •Take a thick based or non stick kadhai. •Add 3 tbsp ghee and milk powder. •Put on a gas at the lowest flame. Keep sauting continuously. •After 2-3 minutes of roasting add remaining ghee and keep roasting continuously. Gas flame should be lowest. Roast the milk powder till it becomes light brown.
