Homemade Paneer

This recipe is very easy to prepare.  You can prepare the Paneer at home and use by keeping in refrigerator for 2-3 days. Ingredients... *Full fat milk... 1 litre *Vinegar... 2 tablespoons  *Water... 4 tablespoons. Method... *Mix vinegar and water. *Boil the milk in a pan. *When milk starts boiling add gradually this vinegar water mix and keep stirring with a spoon.  Take care to add this vinegar water mix spoon by spoon only. *When milk solid separates and yellowish water releases, immediately switch off the Gas. Overboiling will make paneer hard in texture. *Place one soft cotton cloth in a steel strainer. Keep this strainer in a big pan so that whey water will get collected in the pan. Prepared this Yummy n Tangy  Pickle for the first time...
My mother used to prepare this.
This year I got some tender small Mangoes in the  market..
I immediately bought it n decided to prepare this Pickle...
It goes very well with Curd Rice, Dal Chaval, Regular meals...
Ingredients...
*Small tender Mangoes... 500 gms
*Salt... 1/2 Cup
*Red Chilli Powder... 1/2 Cup
*Big Mustard Seeds... 1 tablespoon *Turmeric...1/2 tsp
*Asafoetida Powder...1/2 tsp *Groundnut Oil ...2 tsp
Method...
*Wash n dry Mango  thoroughly.
*They should be dry completely... everything should be dry for the Pickle...
*Apply the Groundnut Oil to the Mangoes.
*Mix Mustard Seeds, Red Chilli Powder, Salt, Turmeric and Asafoetida Powder in the mixer jar n make a fine Powder.
*Mix this with oil costed Mangoes.
*Keep all this in a big Glass or Plastic Bowl.
*You may find it dry in the beginning...but from the 3rd day onwards it will release water slowly.
Mix them every day Morning n Evening...
*On 7 th day you will find it completely done.
*Store in dry glass container.
*It tasted heavenly...

बाळकैरीचे लोणचे
बाळ कैरी म्हणजे लिंबाच्या आकाराच्या छोट्या छोट्या कैऱ्या... त्या संपूर्ण वापरून केलेले लोणचे... या लोणच्याला वडु मँगो पिकल असे पण म्हणतात...
माझी आई हे लोणचे करते...
सध्या बाजारात छोट्याश्या आत मध्ये पक्की कोय न  झालेल्या कैऱ्या मिळत आहेत.
हे लोणचे खूप छान रसदार असते दही भात, वरण भात किंवा रोजच्या जेवणात फार सुंदर लागते...
बघु या कसे करायचे बाळ कैरीचे लोणचे...
साहित्य
*छोट्या लिंबाएवढा कैऱ्या... अर्धा किलो
*लाल तिखट... अर्धी वाटी
*मीठ... अर्धी वाटी
*मोहरी...एक टेबलस्पून
*हळद... अर्धा टी स्पून
*हिंग पुड...अर्धा टीस्पून
*शेंगदाणे तेल... दोन टीस्पून
कृती...
*प्रथम कैऱ्या दोन-तीन तास पाण्यात बुडवून ठेवून स्वच्छ कोरड्या करून घ्या ....लोणच्याला लागणारे  सर्व साहित्य कोरडे असावे.
*कैरी ला दोन टी स्पून शेंगदाणा तेल चांगले लावुन घ्यावे.
*मोहरी, हळद ,तिखट ,मीठ व हिंग हे सर्व मिक्सरमध्ये एकत्र कोरडे बारीक वाटून घ्यावे. *वरील वाटलेला मसाला कैरी ला लावून ठेवावा. शक्यतो हे सगळं एका काचेच्या किंवा प्लास्टिकच्या वाडग्यात करा.
*पहिले दोन दिवस हे मिश्रण अगदी कोरडे राहील.
*तिसऱ्या दिवशी पासून पाणी सुटायला   लागेल ...रोज सकाळ व संध्याकाळी एकदा कालवून घ्यावे.
*सातव्या दिवशी पर्यंत पूर्ण लोणचं तयार होते छान रस सुटतो.
*नंतर एका काचेच्या बरणीत  भरून ठेवावे. *उत्तम टिकून राहते व चवदार लागते 😋😋
