Ingredients... 1 Cup...150 ml *Til without polish...2 cups *Finely chopped Jaggery... 1 Cup  Method.... *Roast Til in a kadhai on low flame, sauting continuously to remove it's raw flavour.  Take care not to over roast it.  Let it cool. *In a mixer jar add roasted Til and Jaggery, grind till it becomes powder. *Put in a wide based pan and mix thoroughly with the help of your hands. *Roll in small Ladoo. *You can eat one small Ladoo daily. Patra is a very popular dish of Gujarat.
In Maharashtra it is called as Aaluchi Vadi.. अळु ची वडी...
In Southern India it is called as Pathrado...
One dish with different names n little variation.
Basic ingredient is Colocasia Leaves. These leaves are good for health, when combined with Tamarind nutrition value increases.
You can make these rolls in advance, and refrigerate it.
Whenever you need to serve cut and deep fry till crispy.
Tastes crispy and yummy 😋😋
Ingredients...
Colocasia Leaves...10 big
*Rice flour...1 Cup
*Chickpea flour...1 Cup
*Tamarind pulp...1/2 cup
*Jaggery...1 tsp... optional
*Water....1.5 Cup
*Red Chilli Powder...2 tsp
*Salt...2 tsp
*Cumin seeds...1/2 tsp
*Termeric Powder...1/4 tsp
*Roasted Seasame seeds...2 tsp
Method...
*Mix Rice & Chickpea flour.
*Add all dry ingredients except Seasame seeds. Mix properly.
* Now add Tamarind Pulp and water gradually without forming lumps.
*Consistency should be such that you have to spread the batter with your hands.
*Wash Colocasia Leaves,  flatten them by rolling out the rolling pin on it's back side.
*Take one leaf apply the batter on its back, now put another leave n repeat in this way  till three leafs.
*Make a tight roll, use thread to tie it.
*Boil water in a cooker/Kadhai/pan, grease the Colander, steam the rolls by keeping in it.
*Steam it for  15 minutes.
*Let it cool, remove the thread , cut the Vadi.
*Deep fry in hot Oil till crispy.
*Garnish with roasted Seasame seeds.
*Serve hot.

खमंग कुरकुरीत अळुवडी ....
कुंडीत मस्त हिरवी गार मोठी अळु ची पाने झाली होती.
पटकन घरातील सर्व सामान घेऊन वडी उकडुन ठेवून...वेळेवर मस्त खमंग तळून खाल्ल्या.
घाईच्या वेळेत अळु वडी चे उंडे/रोल करून गार झाल्यावर फ्रीजमध्ये ठेवून, पण करु शकतो.
अळु वडी कुरकुरीत झाली की खायला खुप सुंदर लागतात.
अतिशय कमी तेलात तळून होतात.
छान हलक्या व कुरकुरीत झाल्या...😋😋
लगेच फस्त झाल्या...😃
साहित्य....
*अळू पाने...10
*तांदूळ पीठ...1 वाटी
*बेसन... 1 वाटी,
*चिंच कोळ ...1/2 वाटी
*गुळ...1 टीस्पून... ऐच्छिक
*पाणी....1.5 वाटी
*तिखट ...2 tsp
*मीठ ...2 tsp
*जिरे ...1/2 tsp
*हळद ...1/4 tsp
*तीळ भाजून...2 टीस्पून
कृती....
*तांदूळ पीठ, बेसन व इतर सर्व मसाले कोरडे एकत्र करा.
* तीळ सोडून बाकी सगळे मसाले घाला.
*पहिले चिंचेचा कोळ व मग पाणी घालून हळूहळू पीठ भिजवावे. गाठी होऊ नये.
*पीठ फार सैल नको, हाताने सहज पसरवता आले पाहिजे.
*अळू ची पाने धुवून,मागील बाजूस लाटणं फिरवून शिरा म‌उ करून घ्या.
* पानाच्या मागील बाजूस पीठ लावा,एकावर एक 3 पाने अशा प्रकारे करून मग घट्ट वळून घ्या/रोल करा. हवं असल्यास दोऱ्याने बांधून घ्या.
*कुकरमध्ये किंवा एका मोठ्या कढईत पाणी गरम करून, त्यावर एका रोळीत तेलाचा हात लावून, केलेले रोल ठेवा.
*15 मिनिटे रोळीत ठेवून वाफवा.
*गार झाल्यावर दोरा काढून, वडी कापून कुरकुरीत तळा.
*वरून भाजलेले तीळ भुरभुरा.
*मस्तच लागतात.
