Homemade Paneer

This recipe is very easy to prepare.  You can prepare the Paneer at home and use by keeping in refrigerator for 2-3 days. Ingredients... *Full fat milk... 1 litre *Vinegar... 2 tablespoons  *Water... 4 tablespoons. Method... *Mix vinegar and water. *Boil the milk in a pan. *When milk starts boiling add gradually this vinegar water mix and keep stirring with a spoon.  Take care to add this vinegar water mix spoon by spoon only. *When milk solid separates and yellowish water releases, immediately switch off the Gas. Overboiling will make paneer hard in texture. *Place one soft cotton cloth in a steel strainer. Keep this strainer in a big pan so that whey water will get collected in the pan. This is a traditional  preparation, which tastes heavenly with hot Rice n Ghee....😋😋
It needs a little bit pre Preperations.

Ingredients...
*Field Beans...1 Cup
*For marination...
Grind 3 Garlic pods, 1/2 tsp chopped Ginger & 1/2 tsp Cumin Seeds without adding water. Also add 1 tsp Red Chilli Powder, 1 tsp Coriander Seeds Powder,1/4 tsp Turmeric Powder.
*For Masala...
Grated Fresh Coconut...1/2 Cup
Green Chillies chopped...3
Garlic cloves...3
Chopped Ginger...1/2 tsp
Cumin seeds...1/2 tsp
Grind all to a fine paste without adding water.
*Onion chopped... 1
*Oil...5 tbspn
*Turmeric Powder...1/4 tsp
*Red Chilli Powder...1 tsp
*Coriander Seeds Powder...1 tsp
*Fresh Coriander chopped...2 tbsp
*Mustard Seeds...1/4 tsp
*Jaggery...2 tsp
*Kokum...5..6
*Curry leaves...8
*Hot water...4 Cup
Method
*Soak Beans in 3 Cup Water for 10 hours.
*Drain out all the Water & let it sprout by wrapping in clean cloth or in sprout maker. It will take 24 hours to get beautiful sprouts.
*Make a lukewarm water, add all these beans. This process helps in peeling. Peel all the Beans.
*You will get 1.5 cup Beans.
* Apply with gentle hands all the marination. Keep it aside for 30 minutes.
*Heat Oil , add Mustard Seeds...let it splutter, add Turmeric Powder , chopped Onions. Saute till it turns soft. Also add Curry leaves.
*Add Red Chilli Powder, Coriander Seeds Powder mix properly.
* Add grinded Masala, saute on medium flame till Oil leaves the sides of the Pan.
* Add marinated Beans, mix properly, saute again for 3..4 minutes.
*Add 4 Cups hot water, mix properly, cover with the lid. Let it cook on low flame for 10 minutes.
* Remove the lid, add Salt, Kokum and Jaggery. Mix properly. Cook for 3..4 minutes.
* Switch off the gas. Garnish with chopped Coriander.
*Serve hot with Rice or Roti.
*Tip...You can replace Kolam by using Tamarind pulp.

Ingredients  1 cup...150 ml •Milk powder....2 Cup  •Milk... 1 Cup  •Pure ghee...Melted...1/2 Cup •Grinded sugar...1 Cup  •Coarsely grinded sugar...3-4 tbsp  •Nutmeg powder.... 1 tsp  •Green cardamom powder... 1 tsp  Method  •Take a thick based or non stick kadhai. •Add 3 tbsp ghee and milk powder. •Put on a gas at the lowest flame. Keep sauting continuously. •After 2-3 minutes of roasting add remaining ghee and keep roasting continuously. Gas flame should be lowest. Roast the milk powder till it becomes light brown. Care should be taken, that it shouldn't burn or stick to the bottom of the kadhai. •This takes approximately 15-20 minutes. •Switch off the gas. Add Milk in the kadhai.
