This recipe is very easy to prepare.  You can prepare the Paneer at home and use by keeping in refrigerator for 2-3 days. Ingredients... *Full fat milk... 1 litre *Vinegar... 2 tablespoons  *Water... 4 tablespoons. Method... *Mix vinegar and water. *Boil the milk in a pan. *When milk starts boiling add gradually this vinegar water mix and keep stirring with a spoon.  Take care to add this vinegar water mix spoon by spoon only. *When milk solid separates and yellowish water releases, immediately switch off the Gas. Overboiling will make paneer hard in texture. *Place one soft cotton cloth in a steel strainer. Keep this strainer in a big pan so that whey water will get collected in the pan. Rajasthani Mirchi Vada

Rajasthani Mirchi Vada or popularly known as Jodhpuri Mirchi vada is famous street food from Rajasthan. Big Green chilli peppers stuffed with spicy masala and deep fried are served with spicy green chutney and sweet & tamarind chutney.

Very tasty and yummmy 😋😋😋

Most favourite in our house...

Ingredients...

For batter

*Chickpea flour /Besan..2 cups

1 Cup...200 ml

*Caraway/ Ajwain seeds... 1/4 tsp

*Water... 1 Cup or little more

*Asafoetida Powder... a big pinch

*Salt... 1/2 tsp

*Bhavnagari/ Big long green chillies...9

*Oil....  for deep frying

For stuffing

*4 medium potatoes... boiled and mashed

*Green chillies... chopped...2

*Chopped Coriander leaves... 2 tbspn

*Fennel seeds - crushed...1/2 tsp

*Coriander powder... 1/2 tsp

*Amchur /dry mango powder ... 1/2 tsp

Or Lemon Juice...2 tsp

*Red Chilli powder...1/2 tsp

*Asafoetida Powder... a big pinch

*Salt.... 1 tsp

*Oil... 1 tbspn

Method....

*Wash the bhavnagari chillies very well with water and dry with a  kitchen towel.

*Slit carefully the Chillies with the help of a knife keeping both the ends intact. Keep aside.

OR

You can blanch the Chillies.


*For...Stuffing

Heat 1 tbspn Oil...add fennel seeds

Chopped Green Chillies and coriander leaves. Also add coriander powder, dry mango powder, asafoetida and red chilli powder. Mix very well. Add mashed potatoes and salt, mix properly and switch off the Gas.

*Stuff the potato mixture carefully in the green chillies.

Stuff all green chillies this way. Keep aside.

For batter...

*In a bowl take  besan, add Ajwain, Salt and Asafoetida Powder.

 Mix properly.

*Now add water slowly mixing carefully. Use hand whisker if possible, taking care that lumps should not form.

The quantity of water needed depends on the quality of besan. Since I use home made besan, the water amount required is more than store bought one. Add 2 tablespoons hot oil and mix properly. This helps in making vada crisp.

*Dip the stuffed chilli in the batter and coat it very well with the batter.

*Fry till golden brown in medium hot oil gently.

*Serve the Vada with Tomato sauce or Sweet tamarind chutney.

*Enjoy....

 राजस्थानी मिरची वडा

 राजस्थानी मिरची वडा किंवा जोधपुरी मिरची वडे  हा राजस्थान मधील अतिशय प्रसिद्ध व लोकप्रिय असा भज्यांचा प्रकार आहे... मसालेदार  सारण भरून खमंग बेसन पिठात तळलेले हे  भजे व सोबत चटकदार आंबट गोड चिंचेची चटणी दिली जाते.

 खूपच चवदार आणि स्वादिष्ट 😋😋😋

 आमच्या घरातील अतिशय  आवडता पदार्थ ...

 साहित्य ...

 आवरणा साठी

 * बेसन/चणाडाळ पीठ ... 2 वाटी

 1 वाटी ... 200 मि.ली.

 * ओवा...1/4 टीस्पून

 * पाणी ... 1 कप किंवा त्याहून अधिक

 * हिंग पावडर ... एक मोठ्ठी चिमूटभरून

 * मीठ ... 1/2 टीस्पून

 * भावनागरी / मोठ्या लांब हिरव्या मिरच्या ... 9

 सारणासाठी

 * 4 मध्यम बटाटे ... उकडलेले आणि कुस्करलेले

 * हिरव्या मिरची ... चिरलेली ... 2

 * चिरलेली कोथिंबीर ... 2 टेबलस्पून

 *शोप...जाडसर भरडून ... 1/2 टीस्पून

 * धणे पूड ...1/2 टीस्पून

 * आमचूर पूड ... 1/2 टीस्पून

 किंवा लिंबाचा रस ... 2 टीस्पून

 * लाल तिखट ... 1/2 टीस्पून

 * हिंग पावडर ... एक मोठी चिमूटभर

 * मीठ .... 1 टीस्पून

 * तेल .... भजी तळण्यासाठी

 पद्धत ....

 * भावनगरी मिरच्या पाण्याने धुऊन कोरडी पुसुन घ्या.

 * चाकूच्या सहाय्याने मिरची मधून काळजीपूर्वक चिरून घ्या.... दोन्ही टोके चिरली जाणार नाही याची काळजी घ्या.... बाजूला ठेवा.

 किंवा

 आपण मिरची एक मिनिट उकळी च्या पाण्यात घालून... लगेच बाहेर काढून गार पाण्याने धुऊन घ्या.

या पद्धतीला ब्लांचिग असे म्हणतात.


 *सारणा साठी ...

 *1 टेस्पून तेल गरम करा ... बडीशोप, हिंग, 

 चिरलेली हिरवी मिरची आणि कोथिंबीर, 1/2 टिस्पून धणे पूड, 1/2 टीस्पून आमचूर पूड, आणि 1/2 टीस्पून लाल तिखट घाला.  चांगले मिसळावे.  कुस्करलेले बटाटे व मीठ घाला, छान एकत्र करावे आणि गॅस बंद करा.

 * बटाट्याचे मिश्रण हिरव्या मिरच्यां मध्ये काळजीपूर्वक भरा.

 अशा प्रकारे सर्व हिरव्या मिरच्या भरा.  बाजूला ठेवा.

 वरील आवरण...

 * एका भांड्यात बेसना मध्ये ओवा, मीठ आणि हिंग घाला. छान एकत्र करून त्यात हळू हळू पाणी मिसळा.  शक्य असल्यास हँड व्हिस्कर वापरा.  गोळे तयार होऊ नयेत याची काळजी घ्या.

 पाण्याचे प्रमाण बेसनच्या गुणवत्तेवर अवलंबून असते.  मी घरचे बेसन वापरले असल्याने पाणी थोडे जास्त लागले. दोन टेबलस्पून गरम तेल घालून छान एकत्र करावे. असे केल्याने वडा कुरकुरीत होतो.

 * भरलेली मिरची पिठात बुडवून तेलात घालावी.

 मध्यम आचेवर तेलावर गोल्डन ब्राऊन होईपर्यंत तळा.

 *टोमॅटो सॉस किंवा आंबट गोड चिंचेच्या चटणी बरोबर सर्व्ह करा.

 *खुप छान लागतात ....

Keep sauting continuously. •After 2-3 minutes of roasting add remaining ghee and keep roasting continuously. Gas flame should be lowest. Roast the milk powder till it becomes light brown.
