This recipe is very easy to prepare.  You can prepare the Paneer at home and use by keeping in refrigerator for 2-3 days. Ingredients... *Full fat milk... 1 litre *Vinegar... 2 tablespoons  *Water... 4 tablespoons. Method... *Mix vinegar and water. *Boil the milk in a pan. *When milk starts boiling add gradually this vinegar water mix and keep stirring with a spoon.  Take care to add this vinegar water mix spoon by spoon only. *When milk solid separates and yellowish water releases, immediately switch off the Gas. Overboiling will make paneer hard in texture. *Place one soft cotton cloth in a steel strainer. Keep this strainer in a big pan so that whey water will get collected in the pan. Chhole bhature, chhole puri, chhole rice are liked by one and all.

They are very tasty, rich in proteins, flavourful.

I can eat simply one bowl chhole without any accompaniment.

 Ingredients ...

 *Chickpeas ... 1 cup

 1 cup ... 200 ml

 *Onions ... 2 medium

 *Tomatoes .... 3 medium

 * Grated Ginger ... 2 tsp

 * Garlic ... 4 cloves

 * Green Chillies ... 2

 * Red Chilli powder ... 1 tsp

 * Salt ... 1 tsp

 * Oil ... 8 tbspn

 * Coriander powder .... 2 tsp

 * Cumin powder ... 1/4 tsp

 * Garam masala ... 1/4 tsp

 * Turmeric .... 1/2 tsp

 * Mustard ... 1/4 tsp

 For Tempering ...

 *Liquid home made Ghee ... 3 tsp

 * Garlic cloves ... 3

 * Green Chillies...slit them... ... 2

 Method ...

 * Soak the chickpeas overnight, put them in the cooker in the morning and add 2.5 cups of water, 4 crushed garlic and 1 tsp grated ginger, cook on high flame for one whistle and on low flame  for 10 minutes.

 * Until then, chop onion, chillies, remaining ginger and  grind well without adding water in the mixer.

 *Chop the tomatoes and grind in a mixer.

*Heat oil in a pan, add mustard seeds, let it splutter, add turmeric powder and chopped onion, saute on low heat till it turns pink, add red chilli powder, coriander and cumin powder and mix well.

 * Add chopped tomatoes, cook along with oil until Oil leaves the sides of the pan.

 * Add cooked chickpeas, add 1 cup water and cook. After 3 ....4 minutes, add salt and garam masala and mix well.

 * Heat ghee in a small iron pan, add garlic cloves and chillies and pour over Chhole.Immidiately  cover with a lid . Let  the flavours infuse for at least 5 minutes. This process gives a nice flavour.

 * Turn off the heat and and garnish with chopped Coriander/cilantro.

 * Enjoy juicy  yummmy Chole.

काबुली छोले

छोले भटुरे, छोले पुरी, छोले भात इतकेच काय पोळी किंवा नुसते पण वाटीत घेऊन खायला आवडतात.दुसरी भाजी नसली तरी चालते. इतके ते चवदार लागतात.

साहित्य...

*काबुली चणे...1 वाटी

1 वाटी...200 मिली

*कांदे...2 मध्यम 

*टमाटे....3 मध्यम 

*आलेकिस... 2 टीस्पून 

*लसूण... 4 पाकळ्या 

*हिरवी मिरची... 2

*लाल तिखट... 1 टीस्पून 

*मीठ... 1 टीस्पून

*तेल...  8टेबल स्पून, 

*धने पूड.... 2 टीस्पून

*जीरे पूड...1/4 टीस्पून

*गरम मसाला...1/4 टीस्पून

*हळद.... 1/2 टीस्पून

*मोहरी...1/4 टीस्पून

वरुन फोडणी...

*पातळ साजूक तूप...3 टीस्पून

*लसूण पाकळ्या...3

*हिरवी मिरची... मध्यभागी चिरा देऊन...2

कृती...

*छोले रात्री भिजत घाला, सकाळी कुकर मध्ये घाला व 2 .5 वाटी पाणी, 4 लसूण ठेचून व 1 tsp आले किस घाला, हाय गॅसवर 1 शिट्टी झाली की 10 मिनिटे सिम गॅस वर शिजवा.

*तोपर्यंत कांदे चिरा, व मिरची, उरलेले आले किस हे सगळे मिक्सर मध्ये पाणी न घालता वाटून घ्या.

*टमाटे पण चिरून मिक्सर मधून वाटून घ्या.

*कढईत तेल तापवा, मोहरी घाला, तडतडल्यावर हळद व कांद्याचे वाटण घाला, मंद गॅसवर गुलाबी होई पर्यंत परता, तिखट, धने व जिरे पूड घालून एकत्र करा. 

*टमाटे वाटण घाला, तेल बाजूने सुटे पर्यंत शिजवा. 

*शिजलेले छोले घाला, 1 वाटी पाणी घालून शिजू द्या, 3,4 मिनिटांनी मीठ व गरम मसाला घालून छान एकत्र करा.

*एका छोट्या लोखंडी कढईत तूप तापवून लसूण पाकळ्या व मिरची घाला आणि ही फोडणी/ तडका घालून लगेच झाकण ठेवा ही फोडणी पाच मिनिटे तरी मुरू द्या. असे केल्याने अप्रतिम चव येते.

*गॅस बंद करून कोथिंबीर घाला.

*रसदार छोल्यांचा आनंद घ्या.

Keep sauting continuously. •After 2-3 minutes of roasting add remaining ghee and keep roasting continuously. Gas flame should be lowest. Roast the milk powder till it becomes light brown.
