This recipe is very easy to prepare.  You can prepare the Paneer at home and use by keeping in refrigerator for 2-3 days. Ingredients... *Full fat milk... 1 litre *Vinegar... 2 tablespoons  *Water... 4 tablespoons. Method... *Mix vinegar and water. *Boil the milk in a pan. *When milk starts boiling add gradually this vinegar water mix and keep stirring with a spoon.  Take care to add this vinegar water mix spoon by spoon only. *When milk solid separates and yellowish water releases, immediately switch off the Gas. Overboiling will make paneer hard in texture. *Place one soft cotton cloth in a steel strainer. Keep this strainer in a big pan so that whey water will get collected in the pan. Chilli Pickle 

 Mirachi ka achar/pickle.

   This is a quick achar. ...which goes on finishing quickly.

Ingrediants. ..

*Fresh green chillies... 125 gms

*Mustard seeds.. 1.5 tsp

*Fenugreek seeds...1/4 tsp 

*Lemon juice....2 tbspn

*Turmeric powder... 1/4th tsp

*Asafoetida powder... 1/4 tsp

*Salt... 1 tsp

*Oil... 2 tbspn 

Method. ..

*Cut chilles lengthwise and then again cut in two parts, we have used non spicy chillies specially available in winter. 

*Add 1 tsp salt & lemon juice, and mix properly. 

*Make a coarse powder of Fenugreek seeds and Mustard seeds.

*Heat oil in a small kadhai or pan, add Fenugreek and Asafoetida powder. Switch off the gas. Immediately add Turmeric powder. Let it cool.

*Add Mustard seeds powder in the Oil.

*Add this in Chilli,  mix properly.

*Let it marinate for 30 minutes.

*Our pickle is ready to eat.

*Refrigerate for longer shelf life.

*We want crispy chillies. so we always prepare this way.

#मिरची लोणचे

हे एक झटपट होणारे व पटपट संपणारे लोणचे आहे. आमच्या घरी मिरची थोडी कुरकुरीत असेपर्यंतच सगळे खातात, त्यामुळे आम्ही ताजे व 3..4 दिवस पुरेल इतकेच लोणचे करतो. 

साहित्य...

*थोड्या जाड व कमी तिखट हिरवी मिरची ...125 gms *मोहरी... 1.5 टिस्पून 

*हळद....1/4 tsp 

*हिरा हिंग ,खडा हिंग पूड... 1/2 टिस्पून 

*मेथी...1/4 टिस्पून 

*लिंबूरस...2 टेबलस्पून 

*तेल... 2 टेबलस्पून 

*मीठ... 1 टिस्पून 

कृती...

*मिरच्या धुवून व पुसून उभ्या व लांब चिरून घ्या. त्यात लिंबाचा रस व मीठ घालून छान एकत्र करून घ्या. 

*मोहरी व मेथी भरडून जाडसर पूड करून घ्या. 

*कढईत तेल तापवून मेथी पूड व हिंग पूड घाला. गॅस बंद करून हळद घाला. 

*तेल गार झाल्यावर त्या मिश्रणात मोहरी पूड घालावी.

*मग हे तेल मिरची मध्ये घालून छान एकत्र करा.

*1/2 तास मुरू द्या. मग हे लोणचे खायला तयार आहे.

*फ्रिज मध्ये 3..4 दिवस टिकते.

*थोडे थोडे करा , व ताज्या लोणच्याचा आनंद घ्या.
