Red pumpkin Veg
This is a healthy and tasty preperation for vrat or fast.
The sweet and sour taste is simply yummy ๐
This veg is complete meal itself.
Ingredients
*Red pumpkin...1/2 kg
*Roasted peanut s...3 tbspn
*Kokam Agal... 2 tbspn
*Jaggery... 1 tbspn
*Coconut Oil or Ghee... 3 tbspn
*Red chilli powder... 1 teaspoon
*Salt... 1 teaspoon
*Cumin seeds... 1/4 teaspoon
*Warm Water ... 1.5 cups
Method
*Peel and dice the red pumpkin.
*Grind roasted peanut from the mixer to a smooth paste by adding water gradually.
*Heat a stainless steel pan or kadhai.
*Add oil or ghee as per your choice. You can make this veg by using ground nut oil also.
*Add cumin seeds in the hot oil, when it crackle s, add Red pumpkin dice and saute for a minute.
*Add Red chilli powder and salt, mix thoroughly and cover with a lid .
*Cook for 3-4 minutes on a low flame stirring occasionally.
*After 4 minutes, add grinded ground nut paste, kokam Agal and jaggery. Mix well.
*Add warm water and cook on medium flame for 4-5 minutes.
*Adjust the sweet and sour taste as per your choice.
*Enjoy ๐
Note...If kokam Agal is not available, you can use only Kokum, or tamarind paste, lemon juice, raw grated mango or sour curds.
