Homemade Paneer

This recipe is very easy to prepare.  You can prepare the Paneer at home and use by keeping in refrigerator for 2-3 days. Ingredients... *Full fat milk... 1 litre *Vinegar... 2 tablespoons  *Water... 4 tablespoons. Method... *Mix vinegar and water. *Boil the milk in a pan. *When milk starts boiling add gradually this vinegar water mix and keep stirring with a spoon.  Take care to add this vinegar water mix spoon by spoon only. *When milk solid separates and yellowish water releases, immediately switch off the Gas. Overboiling will make paneer hard in texture. *Place one soft cotton cloth in a steel strainer. Keep this strainer in a big pan so that whey water will get collected in the pan. #रेणुरसोई देशी हरभऱ्याचे कढण साहित्य .. *एक वाटी काळा हरभरा *तेल...2 टिस्पून *मीठ ...अर्धा टीस्पून *कढीपत्ता... दहा-बारा *लाल सुक्या मिरच्या ...दोन *हिंग... चिमूटभर *हळद... चिमूटभर *लिंबाचा रस...एक टीस्पून कृती... *हरभरा रात्रभर भिजत घालून ठेवा. *सकाळी तीन वाट्या पाणी घालून कुकरमध्ये दोन शिट्या देऊन शिजवून घ्या. *गार झाल्यावर हरभरे बाजूला ठेवा,उरलेले दाट काळसर पाणी असेल त्याच्यात अर्धी वाटी साधे पाणी घाला. *पातेल्यात तेलाची फोडणी करून मोहरी व हिंग घालून खमंग फोडणी करा. *चिमूटभर हळद, लाल सुक्या मिरच्या, व कढीपत्ता पाने घाला. *वरील हरभऱ्याचे उकडलेले पाणी घालून छान उकळी येऊ द्या. लिंबाचा रस घाला. *गरम-गरम कढण प्यायला द्या. *अगदी 5 स्टार मधील क्लिअर सुप पेक्षाही जास्त चवदार वऔषधी आहे.

*रेणूरसोई चवळी व छोल्याचे सुंदल हा एक दाक्षिणात्य कडधान्याची उसळीचा असा प्रकार आहे.  तेल व फारसे मसाले नसले तरीही अतिशय चवदार लागतं आणि पौष्टिक पण आहे. संध्याकाळी चार वाजता चहा सोबत पण खायला सुंदर लागते. दाक्षिणात्य  लोक नवरात्रात प्रसाद म्हणून वेगळ्या प्रकारचे सुंदल करतात. बघूया कसे करायचे सुंदल साहित्य *चवळी ...अर्धी वाटी *छोले अर्धी वाटी *ओल्या खोबऱ्याचा कीस... अर्धी वाटी *खोबरेल तेल... एक टेबलस्पून *लाल  सुक्या मिरच्या ..दोन ते तीन *मोहरी... पाव टीस्पून *कढीपत्त्याची पाने ... दहा-बारा *हिंग.. पाव टीस्पून *मीठ .. एक टीस्पून *लिंबूरस ...दोन टीस्पून *साखर... अर्धा टी स्पून कृती... *चवळी व छोले वेगवेगळे पाच-सहा तासासाठी पाण्यात भिजत घाला *कुकरमध्ये दोन्ही एकत्र करून गॅसवर एक शिट्टी आणि नंतर सिमवर 5 ते 6 मिनिटं वाफवून घ्या. छोले व चवळीची शिजवताना पाणी हे दोन्ही बुडतील एवढे घालावे. *एका कढईत खोबरेल तेल गरम झाले कि मोहरी घाला, व मोहरी तडतडल्यावर हिंग, कढीपत्ता ,लाल मिरच्या व शिजवून घेतलेले कडधान्य घालावे. *मीठ व साखर घालून तीन-चार मिनिटे परतावे. *गॅस बंद करून खोबरे

Ingredients *Tomato...6 *Curd...1/2 Cup *Chickpea flour...1/2 Cup *Garlic...4 pods *Grated Ginger...1 TSP *Green Chillies...2 *Curry leaves...12 *Oil/Ghee...3 tsp *Cumin seeds...1/2 tsp *Asafoetida Powder...a pinch *Salt...1 tsp *Sugar...2 tsp Method... * Chopp the Tomatoes, put it in one Steel Pot. Cover with the lid, steam on the Gas stove for five minutes without adding any Water. *Let the Tomatoes cool. * Now  grind from the Mixer steamed Tomatoes, Curd, Chickpea flour, Grated Ginger, Garlic by adding one Cup water. * Now in another Pan heat Ghee, add Cumin Seeds, after it splutters add Asafoetida Powder, chopped Chillies and Curry leaves. *Immediately pour the  grinded Tomato mix. Goes very well with Jawar or Bajri Bhakari and Roti This dish leaves your house full of aroma...  Very tasty n yummy dish...  Onion Jhunka    Ingredients. .. •500 grams Onions •2.5 tbsp Oil •1.5 cups Chickpea flour. •1.5 tsp salt. •1/2 tsp Turmeric Powder •3 tsp Red Chilly Powder •1 tsp Mustard Seeds Method. .. •Chopp the  Onions.  •Heat Oil in an Iron Kadhai.  •Add Mustard Seeds after it splutters add Termeric n  finely chopped Onions.  •Saute them on medium heat for 5 mts.  •Add Red Chilli Powder n Salt...saute till oil leaves the sides of the kadhai. •Add Besan/Chickpea flour.. mix properly. ..cook by covering on low heat for 3..4 mts... stirring occasionally. .. •Done...   Enjoy....

Tomato Chutney... Sweet & Sour

#RenuRasoi This Tomato accompaniment can be called as Pickle or Chutney. Originally it is called as Khamen Asinba Thongpa in Manipur. I have done little bit changes in the original recipe. I was in a hurry to complete my professional commitments. So prepared this tangy flavour full dish within 15 minutes. It tastes amazing with Dal Rice or Khichadi. Ingredients... *Tomatoes...4 *Oil/Ghee... 2 tablespoon *Nigella seeds...1/4 tsp *Mustard Seeds...1/8 tsp *Fenugreek seeds...12 *Red Chilli Powder...1 tsp *Salt...1 tsp *Asafoetida...a pinch *Jaggery... Lemon size *Lemon juice...1 tsp Method... *Wash and quarter the Tomatoes. *Heat Oil/ Ghee in a pan, add Fenugreek , Mustard n Nigella seeds. *After it splutters add Asafoetida powder n Tomatoes. *Saute on medium flame for 3 minutes. *Add Red Chilli Powder, Jaggery, & Salt , mix properly, add 1 Cup water. *Cover with a lid and cook on low flame for 5 minutes. *Switch off the gas, add Lemon juice. *Very tasty Chutn
