Homemade Paneer

This recipe is very easy to prepare.  You can prepare the Paneer at home and use by keeping in refrigerator for 2-3 days. Ingredients... *Full fat milk... 1 litre *Vinegar... 2 tablespoons  *Water... 4 tablespoons. Method... *Mix vinegar and water. *Boil the milk in a pan. *When milk starts boiling add gradually this vinegar water mix and keep stirring with a spoon.  Take care to add this vinegar water mix spoon by spoon only. *When milk solid separates and yellowish water releases, immediately switch off the Gas. Overboiling will make paneer hard in texture. *Place one soft cotton cloth in a steel strainer. Keep this strainer in a big pan so that whey water will get collected in the pan. This Curry is very tasty and is with the goodness of drumstick s.
We all know the health benefits of drumstick s.
This Curry or Aamti is prepared from fresh juicy drumstick
 Goes well with hot rice and ghee.....😋😋
Ingredients....
 *Drumstick... 250 gms 
 *Oil...2 tbsp 
 *Besan/ chickpea flour....1 tablespoon 
 *Tamarind pulp ...1 tablespoon 
 *Grated coconut ...1/2 table spoon 
 *Red chilli powder... one tsp 
 *Salt ... one teaspoon
 *Goda masala... one tsp
 *Jaggery... one tablespoon
 *Mustard seeds... a pinch 
 *Cumin seeds ...a pinch 
 *Asafoetida ...a pinch 
 *Curry leaves...10
 Method....
 *Wash and cut the drumstick into two to three inch long pieces. Remove few peels.
 *Add enough water to cover the drumstick and cook for five minutes in a pot with a lid. 
 * Keep it aside with water. 
 *Heat oil in a pan and add mustard and cumin seeds. When it splutter s, add Asafoetida powder and  chickpea flour. Saute on a low flame until pink in colour. 
 * Then add turmeric and chilli powder . Also add goda masala, grated coconut and saute for a minute.
 *Add tamarind pulp, jaggery ,steamed drumstick pieces, curry leaves and mix well, add two cups of water and boil well.
1 cup... 150 ml
 *Turn off the gas, our Aamti is ready.
 * Serve hot , tastes yummy with rice and ghee.

छान चवदार हिरव्यागार शेवग्याच्या शेंगा मिळाल्या होत्या.
घरी आणल्या बरोबर पटकन चिरून सुंदर आमटी केली .
गरमगरम भात त्यावर साजूक तूप, आमटी... आहाहा इतकं सुंदर लागले 😋😋
साहित्य...
*शेवग्याच्या शेंगा... एक पाव
*तेल... एक टेबलस्पून
*बेसन... एक टेबलस्पून
*चिंचेचा कोळ ...एक टेबलस्पून
*सुक्या खोबर्‍याचा किस ...अर्धा टेबल स्पून 
*तिखट... एक टीस्पून
*हळद...पाव टीस्पून
*मीठ ... एक टिस्पून
*गोडा मसाला... एक टिस्पून
*गुळ... एक टेबलस्पून
*मोहरी... एक चिमूटभर 
*जिरे ...चिमूटभर
*हिंग ...चिमूटभर

कृती..
*शेवग्याच्या शेंगांचे दोन तीन इंच लांबीचे तुकडे करावे. थोडेसे सालं काढून घ्यावे.
*शेंगांचे तुकडे मावतील तेवढे पाणी घालून एका भांड्यात झाकण ठेवून पाच मिनिटे शिजू द्यावे. *शेंगा पाण्यासकट बाजूला ठेवून द्यावे.
*एका कढईत तेल तापवून मोहरी व जिरे घालावे. तडतडल्यावर  त्यानंतर हिंग व बेसन गुलाबी रंगावर परतून घ्यावे.
* मग हळद, तिखट ,गोडा मसाला, खोबरे कीस घालून परतावे.
*चिंच गुळाचा कोळ, वाफवलेल्या शेंगांचे तुकडे  व कढीपत्ता  घालून छान एकत्र करून दोन वाट्या पाणी घालून , छान उकळी द्या.
*गॅस बंद करा, आपली आमटी तयार आहे.
*गरम गरम शेवग्याच्या शेंगाची आमटी भात आणि तुपासोबत सुंदर लागते.
