This recipe is very easy to prepare.  You can prepare the Paneer at home and use by keeping in refrigerator for 2-3 days. Ingredients... *Full fat milk... 1 litre *Vinegar... 2 tablespoons  *Water... 4 tablespoons. Method... *Mix vinegar and water. *Boil the milk in a pan. *When milk starts boiling add gradually this vinegar water mix and keep stirring with a spoon.  Take care to add this vinegar water mix spoon by spoon only. *When milk solid separates and yellowish water releases, immediately switch off the Gas. Overboiling will make paneer hard in texture. *Place one soft cotton cloth in a steel strainer. Keep this strainer in a big pan so that whey water will get collected in the pan. Masala Dosa
Very crispy n paper thin Dosa when served with Green Coconut Chutney, Tangy hot Sambhar n Potato masala Veg is a complete Meal 👍😋
With the same batter you can prepare soft and fluffy Dosa too...
For Ghee roast Dosa, roast in home made Ghee.

Ingredients...
*Raw Rice...2 Cups
*Udad/ Split BlackGram dal...1 Cup
*Chickpea & Split Peagoen /Toor dal... 2 tablespoon each
*Fenugreek seeds...1 tsp
*Salt... 3 tsp
*Coconut Oil... for Roasting
Or
*Homemade Ghee... for Ghee roast Dosa.
Method...
*Wash and soak the Rice, Dal and Fenugreek seeds for 5..6 hours.
*Grind to a smooth paste.
*Let it ferment for 8 hours.
*In the morning add Salt mix thoroughly, add little water if necessary.
*Dry heat the Iron Tawa for five minutes, spread one teaspoon Oil n let it heat for 2..3 minutes. Now Tawa is ready for cooking.
*Spread 1 tablespoon batter evenly, it should be thin, drizzle Oil from all the sides, let it be crispy by one side
 flip and cook another side.
*In this way prepare  all the Dosa
*Serve  hot with  Potato Masala, Sambhar n Coconut Chutney.
*For soft fluffy dosa make a Dosa by using 2 tablespoon flour.

लोखंडी तवा वापरून हि पटकन होणारा...
छान पातळ कुरकुरीत दोसे, बटाट्याची खमंग भाजी, सांबार   व चटकदार चटणी...😋😋
एकदम झकास व पोटभरीचा मेनु...
एकाच प्रकारच्या पीठापासुन तुम्ही पातळ कुरकुरीत वा जाड म‌उ दोसे बनवु शकता.....
घी रोस्ट दोसा करताना दोसे साजुक तुपात करा.
 दोसा...
साहित्य...
*जाड तांदुळ..2 वाटी
1 वाटी....200 मिली.
*उडीद डाळ...1 वाटी
*हरबरा डाळ व तुर डाळ... 2 टेबलस्पून प्रत्येेेकी
*मेथीदाणा...1 tsp
*मीठ.... 3 tsp
*खोबरेल तेल...1/2 वाटी
किंवा
*साजूक तूप...1/2 वाटी....घी रोस्ट दोसा करताना

कृती....
*तांदुळ, डाळी  स्वछ धुवून व मेथीदाणे घालुन 4..5 तास भिजवा.
*मिक्सर मध्ये बारीक वाटून घ्या, फार पातळ वाटु नका.
*रात्रभर आंबवुन घ्या.
*सकाळी त्यात मीठ घालून, मिक्स करा, गरज वाटली तर 1 वाटी पाणी घालून पातळ करा.
*गॅसवर स्वच्छ घासलेला लोखंडी तवा 5 मिनिटे तापवत ठेवा.
*गॅस कमी करून , त्यावर 2 tsp तेल पसरवून अजून 3 मिनिटे तापवा.
*आपला तवा दोसे करायला सिद्ध झाला.
*तवा मंद गॅसवर करा, 2..3 थेंब तेल घालून पसरवा, 1 मोठा चमचे भरून पीठ घाला, 
*झटपट गोल पसरवा.
छान पातळ पसरवा...बाजूने 2 tsp तेल गोलाकार घाला, दोस्यावर पण 1/2 tsp तेल पसरवा.
*एक बाजु खमंग झाली की सराट्याने हलकेच सोडवून घ्या.
*दुसऱ्या बाजूने 1/2 tsp तेल सोडून 1 मिनिटं ठेवा.
*अशाप्रकारे सगळ्या पिठाचे दोसे करून घ्या .
*नारळाच्या चटणी , बटाट्याची भाजी, सांबार सोबत गरम गरम दोसा सर्व्ह करा.
*जाड म‌उ दोसांकरीता दोन टेबलस्पून पीठ घालून करा.

Keep sauting continuously. •After 2-3 minutes of roasting add remaining ghee and keep roasting continuously. Gas flame should be lowest. Roast the milk powder till it becomes light brown. Care should be taken, that it shouldn't burn or stick to the bottom of the kadhai. •This takes approximately 15-20 minutes. •Switch off the gas. Add Milk in the kadhai.
