Homemade Paneer

This recipe is very easy to prepare.  You can prepare the Paneer at home and use by keeping in refrigerator for 2-3 days. Ingredients... *Full fat milk... 1 litre *Vinegar... 2 tablespoons  *Water... 4 tablespoons. Method... *Mix vinegar and water. *Boil the milk in a pan. *When milk starts boiling add gradually this vinegar water mix and keep stirring with a spoon.  Take care to add this vinegar water mix spoon by spoon only. *When milk solid separates and yellowish water releases, immediately switch off the Gas. Overboiling will make paneer hard in texture. *Place one soft cotton cloth in a steel strainer. Keep this strainer in a big pan so that whey water will get collected in the pan. Onion n Raw Mango Dal
Pyaj aur Kachhe  Aam ki dal
This simple but  Tangy Dal preparation is very favourite in our home....
Very very tasty 😋😋😋😋
Ingredients....
*Split Pigeon/Arahar dal....1 cup *Onion chopped....1 cup
*Grated Raw Mango... 1/2 cup
*Oil... 2 tbsp...
*Green Chillies... 6 chopped
OR
*Red Chilli Powder... 1 tsp
for Tempering...
*Mustard & Cumin Seeds...1/4 tsp each
*Fenugreek seeds...7..8
*Jaggery... 3 tsp
*Salt... 1 tsp
*Turmeric powder....  1/2 tsp
Method...
*Pressure Cook Raw dal by adding Turmeric & 3 Cups water, when it cools take out of Cooker , mash properly with the back of the laddle.
*Heat Oil in a kadhai...add  Fenugreek, Mustard & Cumin seeds when it splutters add Green Chillies...saute...add chopped Onion n grated Raw Mango...saute till Onion becomes soft...add jaggery n Salt.
*Add cooked dal n one cup water...let it simmer for 5 minutes.
*Done..
*Garnish with Coriander.
*Serve hot with Rice n Ghee.
*Enjoy.
Note...If you are using Red Chilli Powder, add at the time of Green Chillies.

 कैरी कांदा वरण ...
उन्हाळा सुरू झाला आमच्याकडे कैरी चे अनेक प्रकार  करणे सुरू होते.
त्यातील च एक आहे सर्वांचे आवडते असे कैरी कांद्याचे वरण...
अतिशय साधे पण चवीला भन्नाट असे हे आंबटगोड वरण म्हणजे...😋😋😋😋😋
 साहित्य ....
 *तुरीची डाळ ....1 वाटी
*कांदा चिरून ....1वाटी
 * किसलेली कैरी ....1/2 वाटी
 *तेल ... 2 टेबलस्पून
 *हिरव्या मिरच्या चिरून ... 6
 किंवा
 * लाल तिखट ... 1 टीस्पून
 फोडणी साठी ...
 * मोहरी आणि जिरे ... प्रत्येकी 1/4 टीस्पून
 * मेथीचे दाणे ... 7..8
 * गूळ ... 3 टीस्पून
 * मीठ ... 1 टीस्पून
 * हळद .... 1/2 टीस्पून
 कृती ...
* प्रेशर कुकरमध्ये तुरीची डाळ व हळद व 3 वाटी पाणी घालून शिजवून घ्या. थंड झाल्यावर कुकरमधून बाहेर काढून डावाच्या सहाय्याने छान घोटून एकजीव करून घ्या.
 * एका कढईत तेल गरम करून त्यात मेथी, मोहरी आणि जिरे घालून तडतडल्यावर  त्यात हिरवी मिरची घालावी ... परतावे, चिरलेला कांदा, किसलेली कैरी घाला ... कांदा मऊ होईस्तोवर परतून घ्या ... गूळ व मीठ पण घालून छान एकत्र करा.
 * घोटलेली डाळ आणि एक वाटी पाणी घालून ... 5 मिनिटे उकळी येऊ द्या.
 * कोथिंबिरीने सजवा.
 * गरमागरम वरण भात व तुप सर्व्ह करा.
टीप...
जर तुम्ही लाल तिखट घालणार असाल तर हिरवी मिरची ऐवजी लाल तिखट घाला.

Ingredients  1 cup...150 ml •Milk powder....2 Cup  •Milk... 1 Cup  •Pure ghee...Melted...1/2 Cup •Grinded sugar...1 Cup  •Coarsely grinded sugar...3-4 tbsp  •Nutmeg powder.... 1 tsp  •Green cardamom powder... 1 tsp  Method  •Take a thick based or non stick kadhai. •Add 3 tbsp ghee and milk powder. •Put on a gas at the lowest flame. Keep sauting continuously. •After 2-3 minutes of roasting add remaining ghee and keep roasting continuously. Gas flame should be lowest. Roast the milk powder till it becomes light brown. Care should be taken, that it shouldn't burn or stick to the bottom of the kadhai. •This takes approximately 15-20 minutes. •Switch off the gas. Add Milk in the kadhai.
