Homemade Paneer

This recipe is very easy to prepare.  You can prepare the Paneer at home and use by keeping in refrigerator for 2-3 days. Ingredients... *Full fat milk... 1 litre *Vinegar... 2 tablespoons  *Water... 4 tablespoons. Method... *Mix vinegar and water. *Boil the milk in a pan. *When milk starts boiling add gradually this vinegar water mix and keep stirring with a spoon.  Take care to add this vinegar water mix spoon by spoon only. *When milk solid separates and yellowish water releases, immediately switch off the Gas. Overboiling will make paneer hard in texture. *Place one soft cotton cloth in a steel strainer. Keep this strainer in a big pan so that whey water will get collected in the pan. मस्त पैकी थंडी पडली आहे... अशा वेळी काही तरी चमचमीत व झणझणीत खावेसे वाटते...

तेंव्हा हे चमचमीत झणझणीत रावण पिठले करून पहा...

अतिशय चवदार चविष्ट झाले आहे, तिखट मात्र नक्कीच आहे...

ज्यांना फार तिखट आवडत नाही त्यांनी छोट्या वाटी ने करुन पहा...

मस्तच लागते...

साहित्य...

सगळे साहित्य एकाच वाटीने घ्यायचे आहे. मी एक वाटी 150 मिली घेतली होती.

*बेसन ...एक वाटी

*पाणी...अडीच वाटी

*शेंगदाणे तेल... एक वाटी

*लाल तिखट.... एक वाटी 

*मीठ ...अडीच टिस्पून

*हळद.... एक टीस्पून 

*चिरलेला कांदा... एक वाटी वरपर्यंत भरून 

*खोबरे कीस... एक वाटी

*मोहरी व जिरे... अर्धा टीस्पून प्रत्येकी

*लिंबू... 1/2

कृती...

*बेसन मध्ये दोन वाटी पाणी हळूहळू घालून कालवून घ्या. गुठळी होऊ देऊ नका.

*एका जाड बुडाच्या कढईत तेल तापवून मोहरी व जिरे घालून ते, तडतडल्यावर हळद व कांदा घालून कांदा थोडा मऊ होईपर्यंत परता. 

*मग तिखट घालून दोन मिनिट परतावे.

*नंतर त्यात खोबरे कीस व मीठ घालून छान एकत्र करा ,मंद गॅसवर तेल सुटेपर्यंत खमंग परतावे.

*नंतर बेसन व पाणी यांचे मिश्रण घालून, बेसन कालवलेले भांडे पुन्हा अर्धी वाटी पाणी घालून , ते पाणी सुद्धा पिठल्यात घालून सगळे छान एकत्र करावे व सतत ढवळत राहावे.

* हि सगळी कृती मंद आचेवर करा.

* बेसन शिजले की बाजूने तेल सुटते.

*गॅस बंद करून, लिंबू रस व कोथिंबीर घालून सर्व्ह करावे.

*आम्ही सोबत बाजरीची भाकरी, मुळा ,गाजर कांदा ,टमाटा, लिंबू व दही घेऊन खाल्ले.
